Method
Prepare the Burger
- Form the beef mince into a loose 180g patty, slightly wider than the bun.
- Season generously with salt and black pepper just before cooking.
- Cook over the hot Kasai grill for 3–4 minutes per side, depending on your preferred doneness.
- During the final minute, place the cheddar on top and allow it to melt.
Cook the Bacon
- Grill the streaky bacon until crisp with good caramelisation from the charcoal.
- Set aside and keep warm.
Toast the Bun
- Lightly toast the brioche bun over the grill until golden.
Assemble the St George's Cross
- Spread burger sauce on the base bun.
- Add lettuce, tomato and gherkin.
- Place the cheeseburger on top.
- Arrange two rashers of bacon vertically and two horizontally across the melted cheese to create the St George's Cross.
- Finish with the top bun and serve immediately.
